Specially for John and Ronnie – my version of lentil and harissa soup! 🙂
Ingredients
- 1 onion
- 1 small leek
- 1 capsicum
- 2 sticks celery
- 1 potato
- handful of parsley
- same of mint
- 2 cans of lentil (drained & rinsed)
- 400 grams finely chopped tomatoes
- 1 cup red lentils
- 1/2 cup small noodles
- 2 bay leaves
- 1 stick cinnamon
- 2 cloves garlic
- 1 teaspoon sweet paprika powder
- same ginger powder
- 1 soup spoon harissa (or tandoori paste – I like to use that too!)
Method
Cut up the veggies. Put some oil in a saucepan and lightly fry them. Add the spices and then the washed red lentils. Put everything in 2 litres of water or chicken stock and cook the mix for 15 minutes. Add the tomatoes & potato, parsley & mint and after that add the tinned lentils & noodles. Now, at this time, you have to see how much more liquid you need to add. Put in enough to have it not too thick.
